Sweet potatoes are brilliant. They are a great carbohydrate source and are very high in fibre which makes them an all round super food. They taste great and can be cooked in many different ways. I used to eat baked sweet potatoes a lot, and they were great to begin with…. but quickly became quite boring to eat in this way. I ‘discovered’ this quick and easy recipe when I was experimenting with some cooking. It really is simple so please do not expect any expert cooking skills… it does taste great though! This simple alternative sweet potato recipe goes great with anything. Chicken, veg, venison grill steaks – you name it.
Simple Alternative Sweet Potato Recipe – Ingredients:
- Sweet Potato (In this example I will base mines around 100g of Sweet Potato)
- 1 Egg
- Seasoning of your choice (I used garlic and herb and some black pepper for this example)
And that’s it!
Simple Alternative Sweet Potato Recipe – Instructions:
Step1: Chop up your sweet potato in to small chunks
Step 2: Place your chopped sweet potato in a pot with boiling water. Heat on the hob for 10 minutes to allow the sweet potato to soften a little
Step 3: Drain the water from the pot
Step 4: Using a hand blender, blend the chopped sweet potato as best as you can (mines usually gets stuck to the hand blender but a few whacks on the edge of the pot or using a fork will get it all free)
Step 5: Add 1 whole egg in the pot along side the sweet potato, and blend again to create a slightly thick mix
Step 6: Add any seasoning, herbs, spices and/or even veg to the mix
Step 7: Pour the mix on to a pre-heated George Foreman grill (don’t be fooled by how it looks)
Step 8: Cook for between 2-4 minutes
Step 9: Serve and enjoy!
I can only describe the consistency as kind of like a pancake. It is really easy to eat and tastes great. You can add whatever you want to the mix really as well. So experiment a little and have some fun!
