Slow cookers are amazing for cooking meat. The long process makes the meat so tender and tear apart so easily and really locks in the flavours. This recipe has everything you are looking for in a healthy slow cooked chicken meal.
For this recipe, you will need:
– Chicken (I used chicken breast)
– Salsa (enough to cover the chicken)
– Beans (You can use your favourite beans – pinto, mixed, kidney beans etc)
– A slow cooker
Step 1: Place the chicken in your slow cooker
Step 2: Add your beans on top (notice I also just added the water from the cans of beans to keep it from drying out while cooking)
Step 3: Add your salsa on top of this
Step 4: Put the lid on and cook on ‘high’ for 4 hours (you can cook at a lower temperature for longer and it will be even more tender)
Step 5: After 4 hours cooking (or more depending on how you want to cook it) you can serve it up, or keep it in a tub for lunch at work like I do
Just look how tender it is – delicious!
Add a side of rice and veggies or just have the chicken on its own for a lower carbohydrate meal – and enjoy!
