Cottage cheese pancakes? I know, not the most enticing recipe in the world but trust us, they are amazing!

Now let’s take a look at what you will need:
- 85g Cottage Cheese
- 2 Egg Whites
- 40g oats
- Cinnamon (optional)
- Toppings of your choice
To begin, get a frying pan on medium heat so that it is ready to start cooking these delights. Then blend your cottage cheese, egg whites, oats and cinnamon in a blender until you get a smooth, slightly thick consistency.
From here all you then need to do is pour them onto your pan to your desired size. It usually makes about 3 medium sized pancakes for me. Cook for roughly about 5 minutes before flipping over and doing the same on the other (or until it is cooked to a level that you prefer).
Now the fun part. Using whatever toppings you like (or that fit within your macronutrient goals) start getting creative and really add some sweetness or flavour to your pancakes. I actually like to put some chocolate chips amongst the mix when they are on the pan and let them melt in. I then add some sliced banana, jam and syrup on top for the flavour.
Pro tip: Add some vanilla extract in the blender when mixing for an extra bit of tasty goodness.
